Zucchini salsa

10 cups zucchini peeled and shredded
4 onions chopped
2 green peppers chopped
2 red peppers chopped
1/4 cup pickling salt (any salt will work)
2 Tbl dry mustard powder
2 Tbl chopped garlic
1 TBL cumin
2 cups of white vinegar
1 cup of brown sugar
2 TBl red pepper flakes
1 tsp nutmeg
1 tsp black pepper
5 cups of ripe tomatoes

bring to boil and simmer for 15-60 minutes depending on how thick you want it.

pour into jars and seal. Process for 15 minutes.
